Basket Cheese
Basket cheese is considered a traditional Easter cheese. It gets its name for the basket it is formed in. When removed from the basket, the indentations left on this cheese resembles an Easter basket.
It is a delicate, fresh, cow's milk cheese. It is a cross between mozzarella and ricotta cheeses. The mildness of this cheese takes on the flavors of which it's paired.
Serving suggestion: drizzle with extra virgin olive oil and a sprinkling of sea salt and cracker pepper and serve with fresh Italian bread. Also used in making a traditional "Easter Pie" (pizza rustica)
